cookie_monsterThis is an amazing recipe we made for some friends that i wanted to share for everyone/anyone who desires good cookies without the fat belly that often goes with them.  Enjoy!

Jolly Holiday 2010 - Jeff and Heather's original Healthy Cookie Monster cookie recipe
We come before you to stand behind you to tell you something we know lots about: cookies.  The idea here is that life is too short not to have cookies every day.  Store-bought surgery, corporate, big-brother cookies are NOT the best cookies to be stuffing down your throat every single day of the week.  With advance research and development, trial and error, this healthy cookie recipe, which is developed specially for me, Jeffrey, by Heather, is now ready to share with you now and forever. Base recipe
1 cup oats
¾ cup unbleached all-purpose flour
1 cup almond meal
½ teaspoon salt
½ cup cup canola oil
½teaspoon vanilla
½ cup Agave syrup
2 tablespoons Maple syrup
one egg
½ teaspoon baking powder
2 tablespoons Bob's red meal flaxseed meal whole ground
1 teaspoon cinnamon

Optional items include: (quantity as desired)
raisins
chopped nuts
dried fruit
peanut butter chips
English toffee chips
chocolate chips
sunflower seeds

Mix with love: wet with wet / dry with dry, then mix it all up really well, stick in fridge for 5 minutes to thicken before dropping the dough on a cookie pan.  Preheat oven to 350, place cookies on butter/oil coated cookie dish tray thingy and cook for about 12 minutes.  Yum!

In addition to the many optional ingredients consider a dollop of jam plumb center on the cookie to create a delightful thing. The Sunday through Thursday cookie typically includes nuts and dried fruits.  For the weekend, holiday, or crossover cookie, add peanut butter or chocolate chips.

Notice what's missing from this recipe: NO sugar, NO butter. If you wanted to get more of a holiday or weekend flavor to your cookie, reduce some of the canola oil and add some butter. Recipe should make approximately about 15 cookies.
